Jerusalem artichokes, or sunchokes, are starchy tubers like potatoes and turnips.
Neither from jerusalem, nor an artichoke, these sweet and nutty tubers are actually the root of a native sunflower.
The term 'jerusalem' is thought to be a bastardization of the Italian word for sunflower, girasole. A perennial vegetable, they add a good amount of flavour to almost any meal. Jerusalem artichokes can be cooked in much the same way as potatoes or parsnips, and are excellent roasted, sautéed, dipped in batter and fried, or puréed into a delicious soup.
With a little scrubbing, you can eat them without the hassle of peeling too. Also sometimes known as sunchokes - who knew!
