Red Cabbage is a nutritional powerhouse, rich in antioxidants, fiber, and vitamins, including vitamin C and vitamin K. It's also low in calories, making it a great option for those looking to eat healthily. It is also great for inflammation and dry throat. Additionally it nourishes the spleen-pancreas, regulates the stomach and relieves abdominal spasms, pain and ulcers (don't over boil or may have the opposite effect). It treats constipation, the common cold, mental depression, and irritability. The Romans used cabbage as a hang over cure!
Cabbage is easy to prepare and can be enjoyed raw or cooked. It is complimented by varying textures and flavors rich, bold and spicy, such as stewed and grilled meats, cream, olive oil, butter, eggs and cheeses, avocados and chiles. Other companion ingredients include citrus, nuts, garlic, shelling beans, farro, sausages, mushrooms, ginger, fennel, shallots and light-bodied vinegars.
