A striploin roast, also known as a New York strip roast, is a delectable and impressive cut of beef that's perfect for special occasions and gatherings. This roast is carved from the same area as striploin steaks, and it features a well-marbled, boneless, and tender center, making it incredibly flavorful and juicy when roasted to perfection. Its outer layer often boasts a beautiful layer of fat that adds to the roast's succulence and imparts a rich, beefy taste. Striploin roasts are typically seasoned with herbs and spices, then slow-roasted to achieve a mouthwatering medium-rare to medium doneness. Sliced into generous portions, a striploin roast makes an elegant centerpiece for a hearty and delicious meal, offering both impressive presentation and incredible flavor.

Cooking Guide:

  1. To marinate and cook a buffalo roast, start by choosing a marinade that complements the flavour of the meat.
  2. Tenderize the roast and let it marinate in the refrigerator for at least 4 hours or overnight.
  3. When ready to cook, preheat the oven to 325°F (163°C). Remove the roast from the marinade, sear it in a skillet, and transfer it to a roasting pan.
  4. Insert a meat thermometer and roast until the desired internal temperature is reached (135°F/57°C for medium-rare, 145°F/63°C for medium).
  5. Optionally, baste the roast with reserved marinade or a butter and herb mixture while cooking. Once done, let the roast rest for 10-15 minutes, then slice against the grain.
