- To marinate and cook a buffalo roast, start by choosing a marinade that complements the flavour of the meat.
- Tenderize the roast and let it marinate in the refrigerator for at least 4 hours or overnight.
- When ready to cook, preheat the oven to 325°F (163°C). Remove the roast from the marinade, sear it in a skillet, and transfer it to a roasting pan.
- Insert a meat thermometer and roast until the desired internal temperature is reached (135°F/57°C for medium-rare, 145°F/63°C for medium).
- Optionally, baste the roast with reserved marinade or a butter and herb mixture while cooking. Once done, let the roast rest for 10-15 minutes, then slice against the grain.
