These potatoes were harvested as soon as they were ready to eat! Although this means they are incredibly fresh, it also means that they are generally quite dirty. That being said, it's important to store potatoes with dirt still on them. Their lifespan dramatically lengthens when stored dirty, in a dark place, and completely dry - who knew!
Yukon potatoes are best suited for cooked applications such as roasting, grilling, frying, mashing, sautéing, and boiling. Extremely versatile, these potatoes can be boiled and mashed or used to make gratins, hash browns, and purees. Yukon Gold potatoes are also a popular potato choice for French fries. They pair well with cream, butter, garlic, bacon, cheese, fried and scrambled eggs, and herbs such as oregano, cilantro, sage, basil, and tarragon.
Yukon potatoes will keep up to two weeks when stored in a cool, dry, and dark location.
