Add some spice to your cooking with these perfect jalapenos. There's a saying in Mexico that goes something to the effect of "Chile's have no honour." That goes to say that some are quite hot and others quite mild, but there's no way to tell the difference. Unless you're a chile fiend, it's best to test each one before deciding how many to add to a recipe, or whether to leave the seeds (the hottest part) in or out.
