Butternut is a rich and meaty member of the squash family. With mostly smooth skin, it is one of the easier to peel squashes, allowing for a range of cooking options including cubing and steaming. Use it as a base for a rich and naturally creamy soup, disguise it an On the Move favorite of butternut mac’n’cheese, or cube it and add it to a vegetable hash.
Nutritionally, it provides an incredible dose of vitamin A and is also rich in calcium, magnesium, potassium and vitamins B6 and E.
