We know it's a vegetable, but it is so often used as a fruit we lumped it in that category. Rhubarb crisp, rhubarb jam, rhubarb muffins, strawberry-rhubarb pie - it's good to know that the key ingredient in some of our favourite desserts is also nutritious and full of health benefits. Rhubarb is an excellent source of Vitamin C, which is important to help support a healthy immune system. It is a good source of calcium and is low in sodium and saturated fat. Rhubarb is high in dietary fiber and has long been used as a laxative.
