Watch for this attractive, dark green, feathery salad green in early spring. Used extensively in Japanese cooking, in stir-fries and soups, mizuna is still fairly new to the North American palate. Its piquant, mild peppery flavour adds an arugula-like zest to salads. It can be used as a decorative and flavourful topping for pasta and meat dishes.
