Neither from jerusalem, nor an artichoke, these sweet and nutty tubers are actually the root of a native sunflower. The term jerusalem is thought to be a bastardization of the Italian word for sunflower, girasole. A perrenial vegetable, they add a good amount of flavour to almost any meal. With a little scrubbing, you can eat them without the hassle of peeling too. Also know as sunchokes.
