Fennel - 1 bulb
Crisp with a mild licorice flavour when raw, it makes an excellent addition to salads and slaws. You can use the entire plant from bulb to frilly green frond. The latter serves as a great garnish, or use it where you would ordinarily use dill for a flavour twist. Cooked fennel takes on an entirely different flavour, mellowing the licorice flavour and drawing out a sweet nutty note.
