Perhaps the most underappreciated vegetable out there, Collards (or collard greens) are an excellent source of phytonutrients, calcium, and Vitamins A, K and C. They also happen to be delicious and highly adaptable in the kitchen. You can chop them into a soup or stew, lightly steam them and use them as wraps in place of a tortilla, or gently sauté them with garlic and chili peppers for a quick side dish.
