Our meat is frozen almost immediately, and is processed small quantities at a time, minimizing the time from the Passmore fields to your tummy.
99% of the ingredients are Certified Organic
pork and natural wood smoke. The slab pork bellies are "cured" for
8 days in a water based solution containing the following ingredients
prior to the smoking process:
Sea salt (approx. 82%), cane sugar (approx. 8%), sodium nitrite (approx.
6%), spices (approx. 3%), and traces of polysorbate 80, glycerine, and
sodium bicarbonate. It was explained to me that the trace ingredients
aid in the absorption of the main ingredients. Also, the use of sodium
nitrite (not nitrate) is mandated by the CFIA.
